The holidays are over, but it's still summer and I can't stop thinking about drinking cocktails. I wake thinking about them and I go to sleep thinking about them. I thought I’d share with you an oldie, but with a new added touch. Pineapple mojito. It adds a bit of sweetness, but still has that precious mojito touch to it. Here’s what you’ll need for this beauty:
1 cup white rum (normal cup size)
1ltr pineapple juice(only half to be used)
1 tablespoon sugar
1ltr bottle soda water (only half to be used)
6 fresh mint leaves
1 lime (cut in wedges)
A handful ice cubes
Pineapple slices (or cubes) for garnish
-Makes a full regular jar-
1. In the bottom of your jar muddle the mint leaves and sugar together.
2. Add the pineapple juice and white rum and stir until sugar is dissolved.
3. Add the ice, soda water, and garnish with lime wedges and pineapple slices (or cubes).
Serve immediately. Cheers!
